For the first four months of being pregnant, the mornings were filled with carbs, carbs, and more carbs. Bagels with probiotic cream cheese have been my BFF, substituted for the occasional smoothie bowl when I wake up either feeling a) guilty for the half of a cake I ate the night before or b) am feeling ambitious. I have always been someone that needs something sweet for breakfast, so I’ve never been much of an eggs person. Enter my new fave, the Easy Baked Apple Oatmeal.
This whole recipe takes less than 10 minutes to make and is perfect for a solo serving.
Easy Baked Apple Oatmeal
Heat 1 Cup almond milk or milk of choice on stove top until it starts to lightly bubble (I like homemade almond milk from Sweet Laurel Cookbook)
Add in 1/2 Cup of Old Fashioned Rolled Oats (I like Bob’s Red Mill) and 1/2 chopped apple, stirring frequently. Adjust heat as needed.
Add 1 pinch of cinnamon, 1 pinch Himalayan Pink Sea Salt, 1 tsp Coconut Butter (I like Motha’Butta Sea Salted Vanilla)
Continue to stir until most milk has mostly cooked off. You should be able to cut through the apples with a wooden spoon when it’s finished.
Remove from stove top and place into a bowl. Add your favorite toppings and serve! I am currently obsessed with the Cinnamon Snickerdoodle Almond + Cashew Butter from Ground Up PDX and add a dollop on top for protein. Other options include chocolate chips, honey, or whatever else your cravings call for.
